
Do you have a dish that you love so much because it is a part of special memories? It just reminds you of a place and time and all the flavors and smells bring it all back. Some of my fondest memories are of times with friends and family in Birmingham, Alabama. I bought my first place in Southside when I worked in politics. It was a two story townhome and I loved it. It was close to downtown and right underneath Vulcan. The view from my bedroom window was Vulcan’s same view of the city skyline and at night the lights danced all about.
One of the best things about living in Southside was being so close to Birmingham’s legendary food scene and one of my favorite restaurants, Surin West. Their Super Crunch roll was my gateway to the world of sushi and my absolute favorite dish was their Chicken Massaman. Every bite exploded with flavor. My poor husband went all the time when I was pregnant with our son and, many moves and states later, I still love it. So, you can imagine my delight when I found a copycat recipe! Y’all it tastes just the same and with every bite those memories come flooding back. If you want a taste of home or just love a good curry give it a try! Cooking Tips and Tricks
- Use the Santoku knife to prep your onion/shallots.
- Use the Food Chopper to quickly dice the onions/shallots.

- Use a Non-Stick Skillet to make this amazing sauce.
