As we start to navigate through the new year and implement those goals we have set for ourselves, I have lately found it helpful to watch those that I admire for inspiration and for help. I believe it is extremely important to surround yourself with mentors and to have, not in an obsessive or unhealthy way, idols you admire. I have inspirational photos, quotes and motivational phrases on display in my room, office and even as a screen-saver on my phone. For me, it is important to stay motivated and to remind myself of why I set those goals.
I have several people I admire when it comes to cooking and food as well! I love to follow blogs and try new things and see the creativity that people have with food. One of my food idols is Frank Stitt from Birmingham. He supports local farmers and has the most delicious and beautiful recipes! (Side note- if you are ever in Birmingham, you must go to The Highlands or Bottega and Frank Stitt’s Bottega Favorita is a must have cookbook). Another of my food idols is Julia Child, although, her recipes can sometimes be intimidating. I do not have as lofty as goal as Julie in the movie, Julie and Julia, but I do love to try her recipes from time to time. Years ago, I came across this delightful take by Sugar & Spice by Celeste. It is easy and absolutely melts in your mouth! Enjoy!

Cooking Tips and Tricks
- I used the Rockcrok Dutch Oven to cook both in the oven and on the stove-top.
- The Quick Slice and Santoku Knife made prepping the mushrooms and shallots a cinch
- The Adjustable Measuring Spoons and Measure All Cup make for easy cleanup and are such a space saver!
- The Large Chef’s Tongs are great for cooking the chicken and serving and lock for easy storage.
